Having been gluten free for over two years now I can tell you from experience that gluten free foods have not always tasted that great especially baked goods like pizza crust and cookies. Luckily over time mainstream gluten filled brands started offering Gfree options which in turn forced the exclusively Gfree brands to really step up their game. This healthy competition resulted in all kinds of yummy gluten free foods that even our gluten loving friends and families can enjoy. Hooray! Today I’m going to show you our favorite gluten free Valentines Day meal– gluten free pizza and gluten free chocolate chip cookies! In that order ;)
We’ve tried a myriad of Gfree pizza crusts, mixes and pre-made but the Namaste brand always wins it’s way into our cupboard as it is the only one that can fool a glutenoid into thinking it’s not gluten free. You do have to bake the crust before you put the toppings on but it’s pretty easy to whip up. To really push the flavors to the artisan level I like to add some Italian herbs into the crust mix before baking. As for toppings we always go for color: green bell pepper, olives and pepperoni or salami.
When it comes time for cookies we prefer the chocolate chip variety and it seems that good old gluten free Betty Crocker line of sweets never fails us.
I know this sounds stupid but these cookies are in no way healthy. I say this because some of the natural gluten free cookie mixes actually are healthier but the taste is no match for Bettty Crocker. It probably has something to do with that stick of butter……
I ran out of cookie sheets and so I made mini chocolate chip cookie muffins!
